Summer treats that Kids will Love

This week we were in charge of bringing post-game snacks at both Liam and Hannah’s soccer games.  I think that it is great that the families of the players take turns bringing a small snack and drink for the kids at the end of a game.  It is rewarding to them whether they win or lose, they know there’ll be snacks to lift their spirits or keep them going.

Some of the families bring homemade goods and other have brought store bought snacks, either one it is clear that the kids do not mind what it is, they just want it.  For my snack I wasn’t sure if I would have time to make two different snacks but it turned out that the restaurant was pretty calm on Monday and I was able to come up with some great refreshing summer snacks. Here is what I came up with…

Apple Dippers-

Ingredients-
6 Apples, cut into wedges
Toothpicks
Nut butter
Peanuts, almonds, or mini chocolate chips


Instructions-

Stick a toothpick into each wedge and dip in nut butter then into the peanuts, almonds, or chocolate chips.  They were a big hit at the soccer game!

Frozen Fruit Kabobs-

Ingredients-

  • Apple
  • Wooden skewers
  • Grapes
  • Watermelon
  • Melon
  • Melted Chocolate


Instructions-

Skewer all the fruit and drizzle with the melted chocolate.  Freeze on a baking sheet for about 1-2 hours or until frozen.  Enjoy!  (photo before the drizzle )



Party Pinwheels-

Ingredients-
2, 8 oz. packages of softened cream cheese
1, 1 oz. package of ranch dressing mix
2 green onions, minced
4, 12 in. tortillas
½ cup red bell pepper, diced
½ cup celery, diced
1, 2 oz. can sliced black olives
½ cup shredded cheddar cheese



Instructions-

In a mixing bowl combine the cream cheese, ranch dressing, and green onions.  Mix thoroughly and spread on tortillas and sprinkle the red pepper, celery, black olives, and cheese on the mixture and roll the tortillas and wrap in tinfoil.
Chill for at least 2 hours and slice the rolls into slices.

Enjoy!

Both Liam and Hannah’s teams really like the snacks.  The kids kept asking Liam and Hannah if I would bring snacks again before the season was over.  I had to laugh at Liam boasting that he gets to eat delicious food all the time.  It made me proud that he felt like bragging about how great my baking and cooking is.  I am looking forward to the next time I bring snacks for the team, I just hope I have enough time to live up to the standards now.

Kids home for summer


It is finally summer break for my kids and they couldn’t be more excited.  Hannah is going to a horseback riding camp for a week and Liam is playing soccer this summer.  Needless to say it is going to be a fun filled and busy summer.  Although the kids have arranged activities already, I want to make sure we spend lots of time together and make summer memories.



Ever since Liam and Hannah were little I loved planning fun activities, this summer won’t be an exception.  I have mastered how to keep them entertained so they are not complaining they are bored every 5 minutes.  Plan, plan, plan, is the key to success; it is the only way to make sure they are having fun, staying active and not sitting on the couch watching cartoons.

The last week of school was exciting for them because they were looking forward to summer break.  I saw this great idea on Pinterest to have them make a list of all the things they want to do over the summer.  It is a good way to “accomplish” fun new things and keep them looking forward to something.

Here is our list of fun activities Liam and Hannah came up with so far, I am sure they will want to add to it as the summer goes on.

1. Bake cookies and make ice cream sandwiches out of them
2. Have a water party in the backyard with the sprinklers
3. Visit the beach
4. Make a cardboard box fort
5. Go berry picking
6. Have a picnic

7. Go canoeing
8. Go camping
9. Have a campfire and make s’mores
10. Make homemade pizza
11. Set up a lemonade stand
12. Have a water balloon fight
13. Go on a bike ride

14. Help mom plant the garden
15. Visit a museum
16. Go stargazing
17. Play mini-golf, Guys vs. Girls
18. Go to an amusement park or water park
19. Paint rocks to make paperweights
20. Go roller blading
21. Visit the zoo
22. Catch fireflies
23. Have a movie night outside
24. Watch fireworks on the 4th of July
25. Make a giant slip and slide
26. My tie dye shirts and socks
Having the kids make a list of fun things they want to do makes it easier on when planning activities; they are already “kid approved.”  It is going to be a great summer.  :)

Healthy School Lunches

The carefree days of summer are over and my kids have begun another school year.  They are already wining about the early mornings and getting ready…parents I know you know what I mean.  Back to school time is such an exciting time for kids, they are ready to see their friends, make new ones and meet their teachers.  Along with all the excitement comes an uphill battle for parents, packing school lunches they actually like. 


Packing lunch for my kids can be challenging to say the least.  I pack them a healthy meal with their favorite foods, and they come home with an untouched meal.  They say it is more fun to “trade” their food with their friends to get better lunches. 

I try to keep my kids as healthy as possible during the school year, a healthy body helps build a healthy mind.  I figured out my kids want lunches that are unique that no one else has.  They love when I make lunches with wraps or anything that is not just a piece of bread.  Here are a few fool proof lunches that my kids love and don’t trade with their friends. 

•    Chicken Soft Tacos- Fill two small whole wheat tortillas with shredded chicken, lettuce, and tomatoes.  Pack a separate container with mashed avocados with lemon juice, top that with a layer of shredded cheese.  My kids say they love making their own tacos at lunch. 






•    BLTA Wraps (Turkey bacon, lettuce, tomato, avocado)- On a whole wheat wrap, spread mashed avocado with lemon juice, top with a few pieces of turkey bacon, lettuce, and tomatoes.  I think my kids like this because of the “special” avocado on it.



•    And for the side dish win, Frogs on a log- Instead of the beloved ants on a log with celery, peanut butter, and raisins; I make a savory version with cream cheese and olives.  Sometimes, the kids help me spice it up and add red pepper to the log




These are my secret school lunch weapons, I would love to hear what your “go to” school lunches are.   I am in need of more ideas, please share your secret school lunch recipes so all our kids will have yummy healthy lunches. :D
